All-time delicious BBQ recipes

Meatballs

Ingredients

1 kg ground beef
1 kg ground pork
3 eggs
1 cup of breadcrumbs
1/3 cup parmesan cheese
1 teaspoon of oregano
1 clove garlic, minced
1/4 chopped onion
1 teaspoon basil
salt and pepper
white wine and olive oil

Preparation

Mix all ingredients. Form meatballs the size of golf balls. Then, put the meatballs on a tray with olive oil and white wine
After this, the meatballs go to the gas BBQ in a temperature of 200ºC for 8 to 10 minutes on direct fire.

 

Hamburgers with brie cheese and shallots

Ingredients

1 kg of good quality beef minced meat
5 tablespoons of grated bread
2 tablespoons of parsley
5 tablespoons of olive oil
A spoon of black pepper
1 brie cheese
250 of rolled shallots
75g mustard Dijon
150g of arugula

Preparation

First laminate the shallots and stir-fry on a frying pan during 10m on a gentle fire, then leave aside. Then we mix the meat with the grated bread and some olive oil. The parsley pepper and salt. We then make a ball where we put the brie cheese in the center and cover the cheese with the meat for when it was grilling do not look at the cheese. Put 8 to 10 minutes on direct fire. Then bar the bread with the mustard and put the hamburger shallots and arugula… Voilà

 

Pizzas, calzones, and bruschettas of various flavors and ingredients

Ingredients for Pizza Dough Flour Type 00

1000g wheat flour
70g yeast baker
500ml water
15g fine salt
100ml extra virgin olive oil

Preparation

Pour the flour into the marble and open a bottom with the help of a glass or even with the hand. Pour the water, the yeast, the salt and the olive oil. Stir well with the help of a wire or spoon, without bursting the “flour walls.”
As soon as the dough begins to thicken, soften everything with your hands until you obtain a smooth and elastic mass.
Leave to rise, covered with damp cloth, at least 1 hour. Extend and use for pizzas, calzones or even curl with chorizo.
Chef’s Notes: This dough can be made with one part of the whole flour, and another of wheat (it is delicious), or even add seeds to the batter and make seeds

Ingredients for Tomato Sauce

250g of tomato
1 clove garlic
1/2 teaspoon of oregano
1/2 teaspoon basil
5g of salt
Some olive oil

Preparation

In a rotisserie, mix tomato sauce, garlic, oregano and basil, salt and little olive oil. The cheese should be 100% mozzarella.
The ingredients and according to the taste of people but the best known and the margarita, which is tomato and cheese and basil.

Chef’s Notes: Pizza baking temperatures: about 300-320 degrees Celsius for a BBQ with gas, and around 450 degrees for a BBQ burning. The pizza baking time is 5 min.

 

 

Tandoori Chicken with Mango Salad

Ingredients

1-skinless chicken legs olive oil
For the marinade:
25cl of yogurt
juice of 1 lemon
1 clove garlic, minced
1 tablespoon chopped ginger
2 tablespoons garam masala powder
1 tablespoon paprika
Coarse salt and pepper

Preparation

After marinating, place the chicken breasts over medium heat direct (180 to 230ºc). Cooking time: 10 to 14 minutes

Mango Salad

2 ripe sleeves
2 tablespoons olive oil
2 tablespoons chopped coriander
2 chopped purple onions
2 tablespoons brown sugar
2 tablespoons of vinegar
Salt and pepper to taste

Pork ribs on BBQ sauce

Ingredients for the marinade

125 g of brown sugar
12cl of soybeans
12cl of ketchup
2 tablespoons ginger
2 tablespoons chopped garlic
12cl of whiskey

Preparation

Marinate for 3 hours cooking time 4 to 5 hours and fire soft indirect from 140ºC to 160ºC.

 

Fillets of smoked salmon in cedar wood with salad arugula

Ingredients

4 salmon fillets
1 cedar board 40cm wide
Coarse salt and pepper
Arugula salad
Cherry tomatoes
Black olives
Parmesan cheese
Olive oil
Balsamic vinegar
Salt and pepper

Preparation

Leave for 1 hour in water or beer or whiskey, 100g of brown sugar, coarse salt, and pepper. After this, apply medium direct heat at 180ºC to 230ºC. Cooking time 20-30 minutes.

Asparagus with Serrano ham with lemon vinaigrette

Ingredients

700g of asparagus
Coarse salt
200 g of serrano ham

For Vinaigrette:
2 tablespoons cider vinegar
a lemon juice
1 tablespoon Dijon mustard
2 tablespoons olive oil
salt pepper to taste

Preparation

Apply direct medium fire 180 to 230ºC. Then, cook the asparagus for 6 to 8 minutes. Finally, the ham takes 1 to 2 minutes until crispy.

Pineapple pie

Ingredients

6 pineapple slices about 1cm thick
2 spoons of butter
120g of sugar
60g fresh cream 1 tablespoon cinnamon
For dough:
250g of wheat flour
Half spoon of forment
Half a tablespoon of salt
Half a spoonful of baking soda
14 tablespoons milk
1 tablespoon vanilla stratum dessert
125g butter
150g of sugar

Preparation

Cooking time on indirect fire 180ºC to 230ºC. Use the gas BBQ for 45 to 55 minutes
