Grilled Mussels on the OFYR with White Wine and Herbs

Ingredients (serves 4):

  • 1.5 kg of fresh mussels, well cleaned
  • 4 garlic cloves, minced
  • 1 red onion, chopped
  • 200 ml of dry white wine
  • 1 bunch of freshly
  • chopped parsley
  • 1 sprig of thyme or rosemary
  • 1 lemon (juice and zest)
  • Extra virgin olive oil, to taste
  • Freshly ground black pepper
  • Rustic bread (optional, for serving)

Preparation of Mussels with White Wine and Herbs:

  1. Preheat the grill plate: Light the OFYR and allow the plate to heat up well, especially the outer zones (ideal for sautéing).

  2. Sauté the aromatics: Drizzle the plate with a generous amount of olive oil and add the onion and garlic. Let them gently sauté until fragrant, stirring with a steel spatula.

  3. Add the mussels: Place the mussels directly on the plate, preferably in a medium-high heat zone. Stir occasionally.

  4. Flambé with white wine: Pour over the white wine, allowing the alcohol to evaporate as the mussels begin to open. Add the thyme or rosemary.

  5. Finish with freshness: As soon as all the mussels have opened (about 3–5 minutes), remove from the heat. Sprinkle with chopped parsley, lemon zest and juice, and freshly ground black pepper.

Serve immediately, accompanied by grilled bread straight from the plate, brushed with olive oil and garlic — perfect for soaking up the aromatic sauce released by the mussels.

 

Grilled Crab on the OFYR with Herb Butter and Lemon

Ingredients:

  • 2 whole cooked crabs (or crab legs, if preferred)
  • 60 g of butter
  • 2 garlic cloves, minced
  • 1 tablespoon of freshly chopped parsley
  • 1 tablespoon of freshly chopped coriander (optional)
  • Juice and zest of 1 lemon
  • Freshly ground black pepper
  • Olive oil, to taste

Preparation of grilled crab with herb and lemon butter:

1. Preheat the OFYR to a medium-high temperature.

If you’re using whole crab, cut it in half or into large pieces, keeping the shell on to protect the meat while grilling.

2. Prepare the sauce: in a cast iron pan (you can place it directly on the OFYR), melt the butter with the minced garlic. Add the lemon juice, herbs, and a pinch of pepper.

3. Grill the crabs shell-side down for 4–6 minutes, brushing with the butter sauce as they cook. If using crab legs, grill on all sides.

4. To finish, brush with more sauce and sprinkle with lemon zest and fresh herbs.

Serve immediately, accompanied by grilled bread or fire-roasted sweet potatoes.
